Disneyland's {opps can't say that!} Cornbread...



This could be titled "Corn Bread Cup Cakes" because they are so sweet and yummy. I don't cook them in a skillet, but in a 9x9 pan or muffin pan. Do whatever you are most comfortable with, but you have to try these! I figure most of you still have some cold weather left in your month {I saw your weather report} so enjoy.

"A delicious cornbread that will transport you to a magic kingdom of flavor. This recipe can also be used for cornbread muffins."

INGREDIENTS

* 2/3 cup white sugar
* 1 teaspoon salt
* 1/3 cup butter, softened
* 1 teaspoon vanilla extract
* 2 eggs
* 2 cups all-purpose flour
* 1 tablespoon baking powder
* 3/4 cup cornmeal
* 1 1/3 cups milk

DIRECTIONS

1. Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8 inch skillet.
2. In a large bowl, beat together sugar, salt, butter and vanilla until creamy. Stir in eggs one at a time, beating well after each addition. In a separate bowl, mix together flour, baking powder and cornmeal. Stir flour mixture into egg mixture alternately with the milk. Beat well until blended.
3. Bake in preheated oven for 20 minutes, or until golden brown. Serve warm.

These deserve a little honey butter...don't forget to mix some up.
